Local Food Representing the Aizu Area

Kozuyu Nishin no Sansho Zuke (Dried herring pickled in malt vinegar with pepper plants)
Kozuyu is a dish representative of one of the many local dishes of Aizu. This soup is a mix of products from the land and sea such as: scallop ligaments, taro, shirataki, and dried mushrooms. People never fail to prepare this soup for celebrations and festivals. Nishin no Sansho Zuke is one of the many local dishes of Aizu. It is made of dried herring which has been pickled in pepper plants, soy sauce, and sake and is a unique dish found only in Aizu.
Dengaku (Bean curd baked and coated with miso(soy paste)) Japanese Soba
Dengaku is one of the local dishes of the Aizu region. It’s made of fried bean curd, mochi (rice cakes), taro, and herring which have been skewered on sticks of bamboo, topped with a special miso sauce, and grilled over an open charcoal fire. Aizu is famous for its soba production throughout Japan because of the high quality of its locally made buckwheat flour. There are many places in Aizu where you can experience making soba.

Ramen Sauce Katsu-don
A special quality of Aizu area ramen is its thick, curly noodles served in soy sauce-flavored soup. Another local ramen, the type made in Kitakata, is nationally recognized as one of the three best kinds of ramen in all of Japan, along with Sapporo and Hakata Ramen.
Katsu is breaded meat which has been deep fried. This meat, cooked in sauce and served with shredded cabbage on rice, is a specialty dish of Aizu.
